Cinnamon Rolls

I have been on a baking rampage lately.  I am not joking when I say, Fall brings out the best of me. I have been craving cinnamon rolls lately and couldn't refuse the husbands pleas any longer.  These are a little time consuming but worth every minute.  If you ask me, they make for the best kind of comfort food.  

I have had this terrible ritual of needing something sweet every night before I go to bed, since having Lucy. It's the best kind of pick me up to get me through the witching hours.  I knew these were going to be the winning ticket as we burned the midnight oil.  Gooey, warm cinnamon rolls and a tall glass of milk are just what I needed.

I hope this recipe finds you well and gives you that extra boost you might be needing!
Cinnamon Rolls

Rolls
2 1/4 tsp. active dry yeast
1 cup warm milk
1/2 cup sugar
1/3 cup butter, melted
1 tsp. salt
2 eggs
4 cups flour

Filling
1 cup packed brown sugar
2 1/2 Tbsp. cinnamon
1/2 cup butter, melted

Icing
1 stick of butter, softened
1 1/2 cups powdered sugar
1/4  (2 oz) cream cheese
1 tsp. vanilla
1/8 tsp. salt

Dissolve yeast into warm milk.  Add sugar, butter, salt and eggs.  Once combined, add flour and mix well.
Knead the dough into a large ball, using your hands dusted lightly with flour. (Warning, dough is super sticky)
 Put into a bowl, cover and let rise in a warm place for 1 hour or until the dough has doubled in size.
Roll the dough out on a lightly floured surface.

For the filling, combine brown sugar and cinnamon in a bowl.  Using a pastry bush, spread the melted butter evenly over the surface of the dough.
Sprinkle cinnamon and brown sugar on top of butter.
Roll the dough from one side to the next.
Use thread to cut the dough.
Place dough into a lightly greased baking pan.  
Let the rolls rise again until they double in size (about 30 minutes).
 Bake rolls at 400 degrees for 10 to 15 minutes, or until light brown on top.

Combine the icing ingredients while the rolls are baking and set aside.
When the rolls come out of the oven, coat generously with icing.
 Enjoy!  I know I will....  I am going to do my best not to devour the entire pan, all while watching Scandal, my guilty pleasure.

I don't think I have ever commented on here before, but wanted you to know you have someone who enjoys reading your blog in Nebraska! We are about the same age and I also have two little ones. Congrats on your precious newborn!
